Preheat oven to 325 degrees F and line a baking sheet with parchment paper.
In a large bowl, combine the rolled oats, shredded or flaked coconut and almonds.
In a separate bowl, whisk together the honey, melted coconut oil and vanilla extract.
Pour the wet mixture on top of the dry ingredients and toss until everything is evenly coated.
Spread the granola mixture onto the prepared baking sheet in an even layer.
Bake in preheated oven, stirring occasionally, until granola is golden brown and crispy.
Remove from oven and let cool.
Store in an airtight container at room temperature.
