Lime Cheesecake Bars {No-Bake}
A simple and delicious no bake lime cheesecake bar with a graham cracker crust! The best part is, it requires absolutely no baking. A tangy twist of heaven!

- 2 cups graham cracker crumbs (280g) You can also use about 11-12 graham crackers, simply place in a ziplock bag and use a rolling pin to crumb up the crackers
- 1/4 cup packed light brown sugar (50g)
- 6 tbsp unsalted butter, (85g) If using salted butter, omit using salt in the recipe
- 1 pinch salt
- 8 ounce cream cheese, (225g) room temperature
- 14 ounce can sweetened condensed milk
- 1-2 tbsp lime zest
- 1/2 cup freshly squeezed lime juice
- 1/2 cup heavy whipping cream
Line an 8 x 11 inch baking dish with parchment paper. You can also use a 9 x 13 inch if that is what you have, which seems to be a more common size.
In a medium size bowl, mix together graham cracker crumbs, melted butter, brown sugar and salt. Press evenly into baking dish to form crust.
In a large bowl, using a handheld mixer, beat cream cheese until smooth. Add lime juice, lime zest, and sweetened condensed milk and mix until smooth.
In another large bowl, beat heavy whipping cream until you start to see stiff peaks form.
Fold in whipping cream into the cream cheese mixture and mix until combined.
Spread onto graham cracker crust.
Place in fridge and chill for 3-4 hours.
Slice and serve with whipping cream, lime slice or lime zest.

- Lime vs key lime- This could easily be a "key lime cheesecake' by using key limes instead of regular sized limes. My grocery store was out of key limes, so I just used regular limes for this recipe.
- Lime juice vs bottled lime juice- I am all about squeezing fresh limes and using in recipes and cocktails. I would not recommend bottled lime juice whatsoever. It may be possible to use, but I have never used, therefore, not sure how it would alter the taste.
- Juicing limes - I have several handheld juicers to take all the work out of squeezing limes. I would highly recommend getting one, if you don't already have. I mean, it serves many purposes, mainly for making the best homemade margarita's! My favorite handheld juicer is the Barfly Deluxe Juicer
- Zester - I use a microplane zester, works wonders for citrus zest
- Graham crackers vs graham cracker crumbs - I used already made graham cracker crumbs in this recipe. You can also use graham crackers, just place in a food processor and pulse until fine crumbs, or you can place crackers into a zip lock bag and take a rolling pin to it.
