Chocolate Chip Banana Muffins

- 2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 4 over-ripe bananas
- 1 cup sugar
- 2 large eggs
- 3/4 cup unsalted butter (1 1/2 sticks)
- 1 tsp vanilla extract
- 1 cup mini chocolate chips
Preheat oven to 350 degrees F.
Line muffin tin with liners Combine flour, baking soda and salt to a large bowl. Set aside.
In a small bowl, mash two over-ripe bananas. Set aside.
In a large bowl, add the remaining bananas and sugar.
With a handheld or stand mixer, beat until light and fluffy. Add in butter, eggs and vanilla extract. Beat until combined, scraping down the sides with a rubber spatula. Fold in dry ingredients with wet mixture until just combined. This is the part where you can easily over mix your batter. Add in the mashed banana and mini chocolate chips.
Using a muffin scoop, scoop batter into muffin liners, filling 3/4 of the way full. Bake 45-50 minutes and check for doneness using a toothpick. It it comes out clean they're done. If not, bake for additional 2-3 minutes.
