Toasted Coconut Honey Granola

There’s something incredibly satisfying about the crunch of homemade granola, especially when it’s infused with the sweet aroma of toasted coconut and honey and raw golden honey.  A wholesome and addictive treat that’s perfect for breakfast, snacking, or topping your favorite acai bowl, or yogurt parfait.  This is one easy-to-make Toasted Coconut Honey Granola recipe!  I don’t know why it took me this long to just start making my own at home.

The Ingredients:

To create this irresistible toasted coconut honey granola, you’ll need:

Rolled Oats:  The hearty base that forms the crunchy foundation of  this granola.

Shredded/Flaked Coconut:  Toasted to perfection to bring out its natural sweetness and nutty flavor.

Honey:  Nature’s golden elixir that binds the ingredients together and adds a delightful sweetness.

Coconut Oil Adding richness and ensuring the granola bakes up gold and brown and crispy.

– Nuts & Seeds:  Customize your granola with your favorite combination of nuts and seeds    for added crunch and flavor.  Pumpkin seeds, almonds, pecans are some great choices for granola.

Vanilla Extract:  A splash of vanilla enhances the overall flavor profile, adding warmth and depth.

The Method:

  1.  Preheat your oven to 325 degrees F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, shredded coconut, nuts and/or seeds.
  3. In a separate bowl, whisk together the honey, melted coconut oil, and vanilla extract.
  4. Pour the wet mixture on top of the dry ingredients and toss until everything is evenly coated.
  5. Spread the granola mixture onto the prepared baking sheet in an even layer.
  6. Bake in preheated oven, stirring occasionally, until granola is golden brown and crispy.
  7. Remove from oven and let cool.
  8. Store in an airtight container room temperature.

  • 1 medium bowl

Ingredients
  

  • 2 cups old-fashioned oats rolled oats
  • 1/2 cup almonds slivered or sliced
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup honey
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 325 degrees F and line a baking sheet with parchment paper.
  • In a large bowl, combine the rolled oats, shredded or flaked coconut and almonds.
  • In a separate bowl, whisk together the honey, melted coconut oil and vanilla extract.
  • Pour the wet mixture on top of the dry ingredients and toss until everything is evenly coated.
  • Spread the granola mixture onto the prepared baking sheet in an even layer.
  • Bake in preheated oven, stirring occasionally, until granola is golden brown and crispy.
  • Remove from oven and let cool.
  • Store in an airtight container at room temperature.

Notes

  • Make sure to keep an eye on the granola as it's baking, as it can burn quickly and no one wants burnt granola.  Depending on your oven, you might need to adjust baking time.  I have found that about 12 minutes or so works for me.  
  • Optional:  You can try using dried fruits and add in to your granola.  I good starting amount would be about 4 tbsp or so.  Adjust to your liking.
  • Granola will harden as it cools, so make sure not to overcook!
  • Store at room temperature.
  • Use within 2 weeks.
  • Recipe makes about 4 cups total granola.
