Bee’s Knees Cocktail

This is the most refreshing drink I have yet to come across.  Well, wait a minute.  That’s a lie.  I guess my homemade margaritas and pina colada’s might come ahead on this one.  Nevertheless, this Bee’s Knee’s Cocktail is just perfect on a hot summer day.  

A traditional Bee’s Knees Cocktail is made with gin, lemon and honey and usually double strained into a chilled coupe glass.  I on the other hand prefer my cocktails over ice.  Yes, some may argue here that this will just dilute the drink.  Feel free to make with or without ice.  Your call.  The recipe instructions I use here are to make without using ice.

Ingredients needed to make this classic Bees Knees Cocktail

Gin – I like to use either Gray Whale Gin or The Botanist, but you can certainly use your favorite gin in this cocktail.

Honey simple syrup – Two parts honey and one part water, heat until honey is dissolved.  Here you can learn how to make Honey Simple Syrup for Cocktails!

Lemon – always use freshly squeezed lemon juice.  This handheld juicer from Barfly is the absolute best for juicing lemons.  Do not even consider using lemon juice from a bottle.  That will literally ruin your drink.  

Lemon twist – for garnish (optional) you can either use a sliced lemon, or I use an OXO Good Grips Citrus Zester to create curls

How to Make a Bee’s Knees Cocktail:

Step One:  Place a coupe glass into the freezer to chill, or fill glass with ice to keep glass cold.

Step Two: Using a jigger, measure 1 ounce of honey simple syrup and add to a cocktail shaker.

Step Three:  Measure 2 ounces of gin and add to cocktail shaker.

Step Four:  Measure 3/4 ounce freshly squeezed lemon juice.  If you’re lucky and have a really soft lemon you can do this by hand.  I like to use my manual citrus juicer by Barfly, makes it a whole lot easier.

Step Five: Fill cocktail shaker halfway with ice.  Add lid and give it a good 25-30 second shake, until shaker becomes frosted on the outside.  That is a good sign your cocktail is ready!

Step Six: Remove coupe glass from freezer, or discard ice that was placed in glass.  Strain into your cocktail glass and garnish with lemon twist.

Step Seven: ENJOY!
